My family loves eating Mexican dishes so I have one to share with you today!
This recipe is easy, fast and could be adapted in almost any way you wanted! Honestly, I was afraid to cook this for my crew. I try to use a "new to me" recipe weekly but when I picked this one I was scared that my guys wouldn't want it because of the lack of meat!! I'm so glad I went ahead and made it because it was a huge hit!
(my husband and daughter added refried beans however since black beans where inside Zachary, Kyle and I didn't)
You're going to need a few things:
Corn (we used fresh corn from our garden)
Black Beans (drain them)
Salsa (just your favorite)
Cheese
Tortillas
Mix the black beans with your favorite salsa and corn in a bowl.
Get your tortilla - go ahead and place it in your pan and place the mixture into your tortilla. Add cheese to the top of the mixture and brown on each side. This will take about 2 minutes - DON'T BURN THEM!
The hard part is flipping to the other side; trust me this takes practice because the first two I had my mixture fall out!
Here is a tip: Use a large spatula and your hand and it will go smoothly!
When done simply cut with a pizza cutter and you have a wonderful Mexican dish to enjoy for Supper!
If you are like my family we like to add sour cream to just about anything so top it with some and maybe add some lettuce and enjoy!
