I'm a little behind on sharing things just simply because it's busy around here!! You busy??
Holidays, normal life, schooling and then working in the evenings just has me nutty most the time!
So to help save my sanity and some time a few weeks ago I wanted chicken pot pies but I didn't want to cook it in my large pan - seriously my large pan was needing washed and I just didn't want to fool with it - so I remembered seeing a commercial some time back that made them with biscuits and since I just happened to have some I thought I'm giving it a try!
Here is what you need:
Cream of Chicken Soup
Chicken - shredded
Next, I just mixed my cooked veggies with the Cream of Chicken Soup and the chicken in a large bowl, I did add a little sour cream for the taste my family enjoys. Mixed it well so that all was well incorporated together.
Open your biscuits and flatten them out and place inside the muffin tins. This is so easy - Your almost done already!
After you get the biscuits in the muffin tins just spoon your mixture of veggies and chicken inside the opening the biscuit created.
Bake around 400 for 15-20 minutes making sure that the bread doesn't brown too much and at the same time you need it cooked thoroughly!
My family really enjoyed these and I have to say I actually liked the idea even if it was a hurry up meal! I actually even shared some with our Pastor and his wife!
