Weekly Wrap Up 23

Wonderful Valentine trip with my Valentine. We went to see Tim Hawkins live and loved every moment of it. He is so funny and this was our first time and I can guarantee it will not be our last. 

We enjoyed alone time greatly. Enjoyed eating together and silly conversations, krispy kreme doughnuts too!

Then we got some cold icy weather for the start to our week but no problem with homeschooling - we didn't have to go anywhere to learn did we?!

Shooting practice this week. This brought back great memories because I grew up doing this all the time. Wonderful to pass this on to my kids. 

And a huge surprise for our daughter - A PIANO! No more keyboard for her!!

Zachary has been digging into his last Lego set! He has done amazing!

And after a very hard week with some personal, emotional issues we enjoyed a night date with our babies.

Egg Muffin { RECIPE }

I don't want to start out by saying this recipe is for breakfast because my family has mainly ate them for supper! 

These are very yummy and easy to make.

Egg Muffin Breakfast Recipe:

8 large eggs
1 cup egg whites or just add 4 more eggs
3/4 cup seasoning blend ( frozen onions, peppers)
1 & 1/2 cheese
meat of choice (we have used sausage, bacon and ham) 
salt and pepper

Preheat your oven to 350

Mix all your eggs and whisk together until combined well.

Add all ingredients into the eggs.

Spray your muffin tins.

Add 1/4 cup to each hole.

Cook for 25 minutes.


Simple easy - yet wholesome for your family.

We have had this several times since being introduced to a similar recipe while doing Trim Healthy Mama.

We have enjoyed many variations of this too. 

My personal favorite is with sausage.

This is a quick and easy meal for those busy evenings with the family but rest assured you can still give them something that is good for them while in a hurry!

Field Trip Thursday

We decided we needed a little fun to break up this week. 

The last few weeks we have had a lot going on with our foster son and we - my children and I - just simply needed a break.

We enjoyed a cool day out walking in nature. Exploring and goofing off. It was a wonderful day too!

We enjoyed fast food for the first time in weeks lol and a frosty!
